Ilocano miki soup is a comforting noodle dish from the Ilocos region, featuring thick, yellow miki noodles in a savory broth made with chicken or pork. The soup is flavored with garlic, and fish sauce, then garnished with green onions. Although simple, it’s know for its rich, hearty taste, Ilocano miki soup is a beloved dish served during family gatherings and local celebrations.

I made this for the first time for my stepdad’s heavenly birthday and no birthday is complete without noodles! Feel free to cut the noodles into two inch length if you prefer a shorter noodle.

  1. In a large pot over medium heat, add garlic (6 cloves) and sauté until lightly browned.

  2. Next, add in chicken thighs (8 oz), chicken broth (4 cups), and water (4 cups). Bring to boil and simmer until chicken is cooked thoroughly around 8 to 10 minutes.

  3. Remove chicken and shred. Once shredded add chicken back to pot along with annatto powder (1 Tbsp) and fish sauce (3 Tbsp). For another 5 minutes.

  4. Next, add in noodles. Feel free to cut noodles into 2 inch pieces if preferred. Cook noodles according to package.

  5. Add salt and pepper ( to taste). Garnish with green onions, eggs, and chicharron.
