Ginisang Upo is a beloved Filipino dish that showcases the delicate flavors of bottle gourd, or upo. This humble vegetable is sautéed with garlic, onions, and a touch of oyster sauce to create a comforting and flavorful meal. I grew up eating this dish as it was on rotation in my household. Ideal for a quick weeknight dinner or a light lunch, this dish captures the essence of home-cooked comfort in every bite.

Instructions
In a large pan over medium heat, warm the oil (1 Tbsp). Add the garlic (6 cloves) and onion (½), and sauté for 2-3 minutes, until the onions are translucent.
Add the pork (1 lb) to the pan. Stir and cook for 3-5 minutes, or until the pork is browned.
Stir in the tomatoes (2), oyster sauce (1 Tbsp), and fish sauce (1 Tbsp). Cook for 1-2 minutes.
Then add the shrimp heads. Cover and cook for 10 minutes over medium heat.
Add the chopped shrimp (10) and sliced upo (2 medium). Cover and cook for an additional 10 minutes, or until the upo is tender. Season with salt and pepper ( to taste). Adjust the seasoning with more fish sauce or oyster sauce if desired.
White pepper is a great option, but black pepper works as well.
Serve hot with warm white rice.
