Arroz caldo is like the ultimate Filipino comfort food hug in a bowl. It’s a warm, soothing rice porridge simmered with chicken and ginger, often garnished with a crispy fried garlic topping, a sprinkle of green onions, and a squeeze of lemon or calamansi for a little brightness. It's the kind of dish that feels like home no matter where you are. Perfect for rainy days or when you're craving a bit of cozy, hearty goodness!

Instructions
In a large pot, heat oil (1 Tbsp) over medium-high heat. Add chicken thighs (3) and cook until browned.
Add garlic (6 cloves), ginger (1–3 Tbsp), and onions (½). Sauté until onions are soft, about 3 minutes.
Stir in uncooked rinsed rice (1 cup) and stir for 1 minute.
Pour in broth (2 cups) and water (4 cups). Bring to a boil, skimming off any foam that forms.
Once boiling, reduce heat to medium. Cover and simmer, stirring occasionally, until the porridge reaches your desired consistency (about 45 minutes).
If using saffron (1 Tbsp), lower the heat and stir it into the porridge for extra color and aroma. Season with fish sauce ( to taste).
