  1. In a large pot, heat oil (1 Tbsp) over medium-high heat. Add chicken thighs (3) and cook until browned.

  2. Add garlic (6 cloves), ginger (1–3 Tbsp), and onions (½). Sauté until onions are soft, about 3 minutes.

  3. Stir in uncooked rinsed rice (1 cup) and stir for 1 minute.

  4. Pour in broth (2 cups) and water (4 cups). Bring to a boil, skimming off any foam that forms.

  5. Once boiling, reduce heat to medium. Cover and simmer, stirring occasionally, until the porridge reaches your desired consistency (about 45 minutes).

  6. If using saffron (1 Tbsp), lower the heat and stir it into the porridge for extra color and aroma. Season with fish sauce ( to taste).
