Ginisang Pechay at Giniling
Stir-fried Bok Choy and Ground Beef

Ginisang Pechay at Giniling is a Filipino stir-fry dish featuring ground meat, such as pork or beef, cooked with garlic, onions, and tomatoes. Tender bok choy is added to the mix, resulting in a flavorful and hearty meal that's both easy to prepare and delicious.
It holds a special place in my heart because it’s the first Filipino dish I ever learned how to cook! My Tito (Uncle) Butch would always cook it for me and he eventually taught me. This dish reminds me of him and I think will also be the first Filipino dish I teach my own son how to make.

Instructions
In a large sauce pan or wok, heat oil (2 Tbsp) on medium high heat.
Add in onions (½ small), and sauté for a minute or until translucent and soft.
Next, add in garlic (4 cloves) and sauté for another 1-2 minutes until soft.
Add tomatoes (2) and cook until soft, approx 5 minutes.
Add in ground meat (1 lb) and cook until browned, approx 5 minutes.
Once meat is browned, add in the oyster sauce (4 Tbsp), garlic salt (¼ tsp), pepper (½ tsp), and bouillon if using. Stir.
Add in the white parts (stems) of the bok choy (1 large bunch). Mix and cover until stems are cooked, approx 3 minutes.
Add in water or broth (1 ½ cups). Bring to a boil, cover and simmer on medium heat for another 3 minutes.
Add in fish sauce (2 Tbsp) and green leafy parts of the bok choy (1 large bunch). Mix to combine all ingredients. This should cook super fast, approx 1-2 minutes.
Adjust seasoning with salt, pepper, and fish sauce to taste. Serve with rice.
