Mango Peach Pie

Instructions
In a large saucepan place peaches (1 15-oz can) and a 1:1 ratio of diced mangos (1 large).
I weighed the peaches and it was 9 oz, so I used 9 oz of mango. Next time I'll use frozen mango chunks for ease!
Add brown sugar (⅛ cup) and salt (¼ tsp). Mix to combine.
Cover and simmer over medium heat until mangoes are soft.
Mix cornstarch (1 Tbsp) and water (2 Tbsp) together to make a slurry. Add slurry and vanilla extract (½ Tbsp) to saucepan and mix and simmer for an additional 1 minute. Taste and add more sweetener if desired. Remove from heat then let cool.
Once mango peach mixture is cooled down, unwrap dough sheet (2).
I tried out several sizes and I prefer the smaller sized ones ~ For this you would cut the dough sheet into 8 pieces. 4 slices horizontally, and 1 cut vertically.
For each square add in 1-2 spoonfuls of mixture onto one side. Fold dough over to make a pocket. Push down to seal. You can use a fork to make the ridges on the edge.
Next, brush a thin layer of milk on top.
Deep fry for 1-2 minutes on each side or until dough puffs up and is golden brown.
Transfer to a cooling rack and sprinkle with a small amount of sugar while hot. Let cool and enjoy!
