Longanisa Fried Rice

It’s like longsilog, but all mixed together ~ which makes for easy eating. And these days easy meals are necessary because anything I can eat with one hand while holding the baby in the other is clutch!

Instructions
In a large skillet or wok, add the longanisa (12 oz)and cook until browned and cooked through. Remove from the pan, leaving any rendered fat behind.
If necessary, add a little more oil to the pan. Add the diced onion (¼) and minced garlic (10 cloves). Sauté until softened and fragrant, about 3-5 minutes.
Stir in the day-old rice (2 cups), breaking apart any clumps. Stir-fry for a few minutes until heated through.
Push the rice to one side of the pan. Crack the eggs (2) into the empty space and scramble them until just set. Mix the eggs into the rice.
Add the cooked longanisa back into the pan. Stir to combine.
Sprinkle in the garlic powder (2 tsp) and season with salt and pepper to taste. Mix well.
Fold in the chopped chives (1 small bunch) or green onions.
Top with fried garlic and garnish with sliced tomatoes if desired.
