Tortang giniling is a Filipino omelette traditionally made with ground beef, however, you can use whatever you have on hand. I’ve made it with chicken, turkey, and pork and they have all turned out delicious. Although it’s a called an omelette, it’s actually cooked more like a fritter. I like that you can make these omelettes as big or as small as you want! In this recipe I specifically use 1/4c measurements to make smaller omelettes. It’s fun to eat and you can make a whole bunch. This recipe yields approx 8 fritter omelettes?

  1. In a skillet on medium heat, sauté garlic (3–4 cloves) and the white parts of green onions (4) until soft, approx 1-2 minutes.

  2. Increase heat to medium high. Add in ground meat (1 lb). Mix well and cook until browned and cooked thoroughly, approx 5-7 minutes.

  3. Add salt (¼ tsp), pepper (½ tsp), and tomatoes (2). Cook until tomatoes have softened, approx 3-5 minutes.

  4. Turn off heat. Add in green parts of green onions. Mix well. Transfer to bowl and let cool

  5. In a separate bowl, scramble eggs (5). Add in the fish sauce (1 Tbsp). Scramble to mix thoroughly.

  6. Once ground meat has cooled, combine egg mixture and ground meat. Mix well.

  7. In a skillet over medium to medium high heat, add in approx 2-3 tbsp oil. Add 1/4 cup of egg and ground meat mixture and cook 2-3 minutes until edges become slightly browned.

    Sometimes the meat clumps up into one section, so spread the meat so it’s evenly distributed throughout the egg. I like mine a little bit crispy too.

  8. Flip and cook for another 2-3 minutes or until egg is thoroughly cooked. Repeat until egg and meat mixture is done.

  9. Let sit on a plate with paper towels to soak up any excess oil.

  10. Serve with white rice and banana ketchup. I like to add sliced chilis for extra spice! Enjoy!
