Here is my mom’s pork and chicken adobo recipe, which I've interpreted based on her methods. She never measures her ingredients because it takes too long, but I believe that with practice, you can develop a feel for the right proportions and adjust as you go. I hope you use this recipe as a guide and taste along the way to suit your preferences—that’s the beauty of cooking.

I also find it wonderful to learn shared recipes. Whether it's a family recipe, a friend's, or one discovered online, each has its own story. You can also add potatoes and/or eggs to this dish (I didn’t have any on hand). My husband’s family includes potatoes in their adobo, and the first thing he said was, “No potatoes? Adobo is supposed to have potatoes!” I laughed because, as I mentioned, that’s the beauty of cooking—everyone has their own unique approach.

I think this mixed adobo of pork belly and chicken is the best of both worlds. Hope you like it!

  1. In a large bowl, combine the pork (1 ½ lb)and chicken (1 ½–2 lb), soy sauce (1 cup), and crushed black peppercorns (1 Tbsp). Let the mixture marinate for at least 1 hour.

  2. In a large pot, heat & add 1 tbsp olive oil. Over medium high heat, remove meat from marinade & brown on all sides (don’t throw the marinade away!)

  3. Once the meat is browned, remove the chicken pieces and set them aside. This prevents the chicken from overcooking while the pork finishes.

  4. Add the oyster sauce (1 Tbsp) and brown sugar (½ tsp) to the pork, stirring well to combine.

  5. Pour in the reserved marinade, vinegar (1 cup), whole peppercorns (1 tsp), and bay leaves (3). Cover the pot and simmer on medium to medium-high heat for about 30 minutes, or until the pork is tender and the sauce has reduced by about half.

  6. Add the chicken and a bit of water if necessary, mixing well to combine. Cover and cook for another 10 minutes, or until the chicken is thoroughly cooked.

  7. Adjust the seasoning to your liking. Serve hot with rice!
